{"id":6901,"date":"2012-01-19T18:23:50","date_gmt":"2012-01-19T23:23:50","guid":{"rendered":"https:\/\/www.bridgeandtunnelclub.com\/blog\/?p=6901"},"modified":"2012-01-19T18:23:50","modified_gmt":"2012-01-19T23:23:50","slug":"keep_pickles_pickles","status":"publish","type":"post","link":"https:\/\/www.bridgeandtunnelclub.com\/blog\/archives\/2012\/01\/keep_pickles_pickles.html","title":{"rendered":"Keep Pickles Pickles!"},"content":{"rendered":"<p>Thank goodness <a href=\"http:\/\/www.brooklynpaper.com\/stories\/35\/3\/24_clintonhillpickles_2012_01_20_bk.html\">at least someone is taking a stand against overpriced pickles<\/a>:<\/p>\n<blockquote><p><em>Fairhurst is banking on the fact that the process of fermentation, during which helpful bacteria eat the sugars in the cucumbers making them technically &#8220;alive&#8221; and in need of refrigeration, will elevate her pickles to the popularity enjoyed by other &#8220;live&#8221; products like kombucha and kim chi.<\/p>\n<p>In contrast, Brooklyn&#8217;s new class of pickles &#8212; and peppers, string beans and fiddlehead ferns &#8212; are shelf-stable after being preserved in vinegar, and without all the good stuff.<\/p>\n<p>Plus, they&#8217;re expensive.<\/p>\n<p>&#8220;I don&#8217;t really understand [the expensive prices],&#8221; said Fairhurst, who made the move to Brooklyn after being priced out of the Lower East Side &#8212; where the shop had been since 1920 &#8212; and still sell her sells her cucs for $6 a quart. &#8220;Pick[l]ing isn&#8217;t rocket science.
