Apple Pie

There are thousands of ways to make an apple pie, but when making a big dinner, we stick to the basics. Cut up four Honeycrisps (or your favorite tart, firm baking apples) and saute them in butter until softened, adding freshly grated cinnamon, nutmeg, and cloves, and brown sugar to taste. Fill a pre-baked pie crust and then top with either a full crust, lattice top, or crumb according to your supply of pastry dough. If crusting it, be sure to cut a few air vents and baste the top with egg whites or butter, and add some decorative doodads if you feel a fit of whimsy. We made leaves. Bake at 325 F until the insides are bubbling up and the crust is browned. To avoid burnt edges, just use a pie ring or aluminum foil to cover the crust until the last 15 minutes or so.
